Leek and potato soup recipe
Today I made my first ever leek and potato soup using a leek and potato soup recipe which quite frankly I made up as I went along! If I say so myself it tasted rather good. I think the key thing is to not be too prescriptive about what you put in .. here's what I did, if anybody has a better leek and potato soup recipe then add your comments.

Ingredients:

    About 4 pints of good stock. I was clever(!) and made this up the night before from our Sunday dinner ingredients. Basically put a chicken carcass, a whole carrot, a peeled onion with 3 or 4 cloves inserted and 4 to 5 pints of water into a big pan, bring to the boil and simmer for 2-3 hours. Skim the fat off the top regularly. Allow to cool and then strain through a sieve. you can store in the fridge in a large milk carton.
    Discard the carcass etc into the bin


    1 large onion
    approx 3 leeks
    approx 4 large potatoes or equivalent small potatoes, chopped into cubes
    salt and pepper
    single cream (optional)
    chives (optional)


    Fry the onions and leeks on a low heat until softened and translucent. Add the stock and the potatoes to the pan, bring to the boil and simmer for 2-3 hours. Season well.


    After 2-3 hours take off the heat, allow to cool and then whizz down with a hand held blender. For thicker more rustic soups you can leave as is, for a smoother variety pass through a sieve.


    When ready, bring back to the boil and simmer for 5 minutes and then stir in cream to taste. Do not allow to boil again. Stir in the chives and serve with crusty bread.


    So there you have it - my first attempt at a leek and potato soup recipe!
